Here is a new Banana Cake with cream cheese icing. I tried on the weekend. It is delicious, turned out great. My family loved it :)
Banana Cake with Cream Cheese Icing
Ingredients:
- 1 1/2 cups ripe bananas , mashed
- 2 teaspoons of lemon juice ( i use the bottled Real lemon )
- 3 cups of flour
- 1 1/2 teaspoons of baking soda
- 1/4 teaspoon of salt
- 3/4 cup of butter or margarine , softened
- 2 1/8 cups sugar
- 3 large eggs
- 2 teaspoons of vanilla
- 1 1/2 cups of buttermilk
- 1/2 cup of butter or margarine, softened
- 1 ( 8 ounce) package of cream cheese softened
- 1 teaspoon of vanilla
- 3 1/2 cups icing sugar
- Chopped walnuts or pecans ( i like to grind pecans in a coffee grinder to make them really small to sprinkle )
- Preheat oven to 275*F
- Grease or spray a bunt pan or 9 x 13 pan.
- In a small bowl,mix mashed bananas with the lemon juice; set aside.
- In a medium bowl, mix flour, baking soda and salt; set aside.
- In your mixing bowl , cream 3/4 cup of butter or margarine and 2 1/8 cups of sugar until light and fluffy.
- Beat in the eggs, one at a time, then stir in 2 teaspoons of vanilla.
- Beat in the flour mixture alternately with the buttermilk.
- Stir in banana mixture.
- Pour batter into prepared pan and bake in preheated 275* F degree oven.
- Set oven for one hour, bake until toothpick inserted in center comes out clean. ( it took my bunt pan 1 hour and 15 min )
- Cool in pan for 10 min, then remove from pan to a cooling rack and cool completely.
- For the frosting, cream the butter or margarine and cream cheese until smooth.
- Beat in 1 teaspoon of vanilla.
- Add icing sugar a little at a time on low speed until combined, then on high speed until frosting is smooth.
- Spread on cooled cake.
- Sprinkle chopped pecans or walnuts over top of frosting, if desired.
- Enjoy!
- If it is not too warm in the house it can stay on the counter covered for a day or two. After that it should go in the fridge covered. Also you can cut pieces and freeze in individual containers for later , just thaw and enjoy!
