Banana Cake & Vanilla Frosting



Here is a recipe for Banana Cake and Frosting. I found this recipe on the net.I tried it it is awesome now a family favorite.It is so easy to make.Hope you like it :)

Banana Cake and Vanilla Frosting

Cake:
1 1/3 cup sugar
1 cup sour cream
2 eggs
4 tbsp butter, softened
4 mashed super ripe bananas
2 tsp pure vanilla extract
2 cups flour
1/2 tsp salt
1 tsp baking soda

Frosting:
4 tbsp butter, softened
1/2 cup heavy cream
1 tsp pure vanilla extract
2 1/2 cups icing sugar

To make cake: ( easily mixes with a spoon no mixer needed)

Preheat oven to 375*f   for dark metal pans.( 350*f  for glass pans ) Uses a 9X13 pan.

Cream together sugar, sour cream,eggs and 4 tbsp of softened butter. Add the mashed bananas and 2 tsp of vanilla extract. Add flour, salt, and baking soda; mix well. Pour into 9 x 13 pan. Bake for 20to 25 minutes. Until a toothpick inserted in the center comes out clean. Cool completely before frosting..

To make the frosting:
Cream butter and icing sugar together till smooth. Slowly add the heavy cream; Stir until smooth. Stir in the vanilla, stir until incorporated. Spread on cooled cake.

Ellis Island Book By Kate Kerrigan



Just read this book today.I read it in a day the story was so engaging i could not put it down.The stoty is about the struggles of a young couple Ellie and John Hogan.It is based in the 1920's in Ireland and New York City.The author writes with such clarity that it transports you there it's almost that you can see, feel and smell the places.I would recommend this book to anyone it was a fantastic read.
